Nicole Klaskey, founder of The Good Food, loves food and hates waste. These are the principles that drove her to create a rescue company aimed at keeping perfectly edible, but imperfect looking, food out of trash cans. When she learned that the world could feed every starving person twice with just the food Europe wastes, she gathered her community, introduced them to second harvesting (the practice of picking left-behind produce from the field after a first harvest), and opened a shop stocking only products that other retails deem unsellable.
