Thirteen years ago, this ahead-of-its-time cool school eliminated plastic water bottles (though it's had to temporarily suspend the policy due to COVID-19). Chatham boasts two native plant gardens, in addition to its work-and-pick garden and solar-thermal greenhouse, both of which supply all dining hall produce.
